Cathy's Greek Salad Recipe
12 oz of Vermicelli Pasta Broken in pieces and cooked 5 minutes
1/2 cup olive or coconut oil
5 tablespoons of sour cream or greek yogurt
4 1/2 tablespoons of lemon juice (fresh is best)
3 tablespoons of greek seasoning
4 tablespoons of chopped green oninons or Cathy's chives   2 tablespoons parsley
1 oz chopped greek olives
2 oz chopped black olives
2 oz chopped green olives

Mix oil, yogurt, lemon juice, and seasoning in a small bowl.  Cool pasta and toss ingredients together. Chill and serve!!

Cathy's Greek Meatballs

Sauce: 1 cup greek yogurt, 1 teaspoons hot sauce, 1 teaspoon soy sauce, 1 teaspoon greek seasoning. MIx ahead and cover in fridge.

Meatball ingredients:
! lb of ground beef
1 lb of ground pork
1 cup bread crumbs
3 tablespoons Cathy's dried onions 
3 tablespoons of coconut oil
3 tablespoons of greek seasoning
3 tablespoons parsley
dash of cinnamon 
2 dashes of hot sauce

Mix meatball ingredients into 1 inch balls, and saute in olive oli until crusty and brown.
Drain off fat and transfer back to skillet.
Gently cover meatballs with sauce.
Ready to serve!!
